The objective of this study was to analyze the characteristics of traditionality expressions at modernized Chinese restaurant in Hong Kong. For this study, we referred to recommendation lists of ‘Michelin,' ‘The Best Restaurants,’ and a website related to Hong Kong restaurants, and sampled 12 restaurants recommended twice or more. The sampled restaurants were surveyed from the 20th to 30th of December, 2009, and the results were as follows. First, tradition 40∼60% + modernity 40~60%: In restaurants where traditional and modern elements were used almost half and half, traditions were reproduced as they were with little modification. Second, tradition 20~40% + modernity 60~80%: In restaurants where traditional elements were fewer and modern elements were more, traditions were reproduced as they were or were mixed with contemporary styles. Third, tradition 10~20% + modernity 80~90%: In restaurants where modern elements were dominant and only a few traditional elements were added, few traditions were reproduced as they were, and even most of traditional elements used were mixed with contemporary styles. |
